Grilled Salmon With Roasted Vegetables
Ingredients
Vegetables of choice
Sweet potatoes
Potatoes
Peppers
Red onion
Carrots
Zucchini
2 cloves garlic
Herb de Provence
Olive oil
Salt
Pepper ( red/yellow/green)
Salmon ( Descaled, rinsed and dried with a paper towel)
Pesto
Method:
1) Wash, Skin and Chop up the vegetables

Method:

2) Mince the garlic
3) Toss all the vegetables with a some olive oil, salt, pepper and herb de Provence and leave for a 10-15 minutes
4) Preheat the oven to 180 degrees fan. Season the salmon pieces with salt and pepper.
5) Roast the vegetables for 45 mins

6) With 20 mins to go before vegetables are done, pan fry the salmon pieces skin side down to crisp up the skin.
7) Place the half cooked salmon pieces in an oven proof dish skin side up and place in the top rack of the oven

8) Leave the salmon to cook with the roast veggies to cook for another 10 mins.
9) Serve the salmon on a bed of roast vegetables
I served the salmon with a spoonful of homemade pesto and a side of bulgur wheat.
So delicious!!!
